
It is all about the seasons on the menu of Sébastien Roux at the Hyatt Paris Madeleine. Fresh and flower-filled, the menu features highly original combinations like the tataki of salmon with mild red pepper from Espelette in the Basque country, artichoke and candied lemon. Another savory appetizer is the sautéed foie gras artfully matched with strawberries, the beautiful, delicious and striped chioggia beet in hibiscus vinegar and tiny grilled scallions.

Superb main courses include beautifully cooked chicken with a medley of corn, spinach and crispy polenta while the Black Angus beef is divinely tender and creatively served with eggplant caviar with smoked salt, little grenaille potatoes flavored with thyme and licorice broth. The chef’s take on a vacherin is made with organic and rich vanilla ice-cream, meringue, raspberry gelée and mascarpone Chantilly whipped cream.
