
Table side service, once de rigour, has become something of a rarity in Paris. But one hotel is going against the current, reviving one of the great French dining experiences: Crêpe Suzette flambéed before your very eyes and nose for that matter. It’s all being played out at the five-star Hôtel Regina Louvre hotel which oozes old money and old world charm for a reason: it opened back in 1900 in the Art Nouveau days. The crepes are flambéed table side. The classic alcohol used in the flaming sequence is curaçao or Grand Marnier both with a distinctive orange taste. Here at the Regina the Crêpe Suzette is called the Crêpe Suzy in honor of the grandmother of the director of the Baverez Hotel group which the Regina, a Parisian icon, belongs to.
