Paris, France — It is one of the finest of the French chocolate houses and it was founded in Paris in 1977 by Robert Linxe. Renowned for its chocolates, the appropriately named La Maison du Chocolat (The House of Chocolate) is today under the helm of head chocolate maker and creator Nicolas Cloiseau who works with 35 chocolate chefs to turn out the house’s signature chocolates. The house has also created its very own eclairs since 1990. The Eclair Maison of the Maison du Chocolate is an unctuous affairs that is over six inches (16 centimeters) of puff pastry filled with vanilla pastry cream and coated in the house’s very own chocolate. But new flavorful eclairs, dreamed up by Nicolas Cloiseau, are in the swing of things this spring giving a glimpse into summertime savors like lemon, pavlova and pistachios.
The Pavlova eclair is coated with ivory white chocolate and pieces of meringue powered with cocoa and adorned with strawberry flavored chocolate. The Praline Pistachio eclair features the house’s remarkable praline chocolate with its intense savors evoking dried fruits, one of the best in the French capital. The eclair is coated with ivory white chocolate flavored with pistachio butter from the pistachio town of Bronte in Sicily which is topped off with chopped pistachios.
