Paris, France — Once again the house of Krug is hosting its outdoor and indoor summer terrace at the prestigious Shangri-La Hotel in Paris. This is one of The Gourmet Gazette’s favorite Champagne Times and it opens tonight, June 1st, and remains on the agenda until the end of September. Perched on the fourth floor of the hotel, the terrace overlooks the Eiffel Tower, offering an unobstructed view of what is arguably the world’s most famous monument.

Dubbed the Bar à Ciel Ouvert or the Open Air Bar, it is a place where champagne lovers can enjoy Krug Grande Cuvée and Krug Rosé. The champagnes are paired with musical notes mirroring the recent studies by the University of Oxford revealing the influence of sound on the perception of taste. Working with the IRCAM, France’s Institute dedicated to the research of music and sound, the house of Krug tunes its taste notes to musical notes so as to better understand how hearing, smell and taste interact. So carefully selected music plays in the background during the champagne time experience.

Every Krug summer terrace is accompanied by a taste sensation as well revolving around a single, surprising ingredient so this year after the potato, the egg, the mushroom, fish and the chili pepper, the humble onion takes its turn. The executive chef of the Shangri-La, Christophe Moret, has dreamed up a trio of hors d’oeuvres to savor with the champagne, notably the famous gougère, a cheese puff pastry garnished with a red onion and hot pepper condiment, an almond flavored cream topped off with caramelized onions and a flaky brioche with grilled onions and flavored with licorice.

Krug’s Grande Cuvée is a blend of at least 120 wines emanating from over 10 different years carefully selected by the house’s cellar master Julie Cavil, offering a mosaic of aroms and savors that would be impossible to obtain from a single year. The house of Krug was founded in 1843 in Reims by Joseph Krug and today the sixth generation of the family is at the helm.
