A Gourmet Gazette Fine Wine Find: The Domaine Siouvette

It’s cocktail time with the Domaine Siouvette rosé 2025 and the great garlic mayonnaise of Provence, aïoli, served here with raw vegetables, but it can also be served with a wide array of salads and cold meat and fish dishes. Photo Sylvain Loire for The Gourmet Gazette

As summer lingers into autumn we headed down to the Saint Tropez peninsula right here in Paris with a delightful rosé from the family-owned Domaine Siouvette wine estate. The vineyards float between the small wooded Maures mountain range and the canton of Saint Tropez in a stretch of breathtaking land surrounded by tree-filled mountains and the sea, the Mediterranean Sea, precisely the Gulf of Saint Tropez. The good earth here is schist which seven generations of the same family have mastered, quietly and expertly working the land and the vineyards into pronounced reds, whites and superb rosés. We had the great joy of tasting the estate’s Domaine Siouvette 2025 Exception Côte de Provence AOP, AOP being the French acronym for Designated Label of Origin. It was a very precise wine with an exquisite blend of the great grape varieties of the region: Grenache, Cinsault, Syrah and Carignan. It managed to be fruity and dry at the same time.

We liked the flamingo pink color and the fresh vitality of the taste. It is clearly a perfect cocktail hour wine in summer, winter, spring or fall. We served it with raw vegetables enhanced with a typical Provençal condiment, aïoli, made with plenty of garlic and olive oil in our in-house kitchen by the Gourmet Gazette’s professional chef Sylvain Loire. The Siouvette estate was founded in 1836 and today Sylvaine and Guy Sauron along with their children Marie and Thomas continue to fashion award-winning wines.  you can also book ahead for a wine tasting at the estate in the beautiful and tranquil  town of La Môle which sits on the edge of the Dom forest. ©Trish Valicenti for The Gourmet Gazette  https://siouvette.com/
