The Essential Egg

Paris, France — We’re joining in in the celebrations for World Egg Day which was established back in 1996 in Vienna and is held on the second Friday in October each year. The egg even has its own governing body, the International Egg Commission which was founded in Bologna, Italy six decades ago and works to inform the world at large of the nutritional value of the egg and how it can help feed the world. The International Egg Day and the European Egg Games are integral components of that mission. Global events, local traditions and community initiatives underscore the importance of eggs in daily diets.

Eggs are an affordable and accessible source of protein. Eggs, you see, are outfitted with super powers because they are loaded with proteins, vitamins and minerals. On the egg nutrition agenda one finds the big Bs, Vitamins B9, B3, B2 and B12 accompanied by Vitamin A and zinc. They are also easy to prepare and enter into both sweet and savory dishes. From the ease of a sunny-side up to a getting it just right soufflé, egg dishes are endless and occupy pages in everyone’s favorite cookbooks. And eggs, too, have their symbolic importance as a symbol of rebirth, notably at Easter.
