Perfection from Petrossian

The mythical Parisian house that is a hymn to caviar and luxury gourmet dishes opened a new venue in Paris facing its historic boutique in the heart of the embassy-filled 7th arrondissement of the French capital. An elegant and comfortable atmosphere hovers in the establishment punctuated by a beautiful boat in crystal for a 19th century chandelier representing a Galion sails over the well-appointed caviar bar. The boat is the emblem of the house of Petrossian, but, too, the symbol of Paris.The house, which was founded in 1920, has opened the new establishment on the eve of its 100th anniversary.
Smoked fish remains a house specialty and the house smokes it delectable selection right in-house as it has been doing since the 1930s. Savor the salmons, herring, pike and salmon eggs which are always on the agenda. But caviar remains the star of the day at dinner time as guests are invited to step up to the caviar bar and select their own caviar with advice from the house’s caviarologists. Each day one finds three different caviars emanating from three different species of sturgeon, all raised for caviar for the world stocks are in rapid decline.
But the restaurant is proffering fine cuisine from chef Renaud Ramamourty with some dishes incorporating caviar either fresh or dried. The fish cod in a dried caviar crust is a taste experience that is clearly rare and quite frankly delicious while there is a sinful liquid caviar to delicately dip souffléd potatoes into.
“On the eve of the celebration of the 100 years of this family house founded in 1920 by my grandfather and his brother we wanted to create a place dedicated to the product that gave Petrossian its notoriety, caviar,” explains Mikael Petrossian, the manager of the restaurant and a member of the third generation of this family affair.
